The local Homemaker Associations have been busy preparing beef inspired recipes, these recipes will be showcased during September to help brighten up your month.
The Homemakers Association is a volunteer organization that focuses on improving the lives of families and communities through education.
Helen Knight from Madisonville shared her favorite meatball recipe, noting that it’s a quick and easy way to elevate your holiday menu. Knight says the recipe has quickly become a family favorite and is a staple at her gatherings.

Here’s Knight’s recipe:
Ingredients:
For the meatballs:
2 slices of bread
1/4 cup whole milk
1/2 tsp kosher salt
1 tsp black pepper
2 tbsp grated onion
1 clove, minced garlic
2 tsp Worcestershire sauce
1 large egg, beaten
1 lb ground beef
1 lb ground pork
For the sauce:
12 oz bottled barbeque sauce
1 cup cranberries
1 cup marmalade
Instructions:
For the meatballs:
- Preheat oven to 375 degrees
- In a bowl combine bread and milk to form a paste. Add in salt, pepper grated onion, garlic, Worcestershire sauce, egg, ground beef and pork. Mix with hands until combined.
- Scoop into 20 1-ounce balls.
- Heat in a skillet over medium heat with 1 tbsp of olive oil. Brown meatballs on two sides. Once browned, place the meatballs on a parchment-lined baking sheet and bake for 15-20 minutes.
For the sauce:
- In the same skillet the meatballs were browned, add barbecue sauce, marmalade and cranberries. Over low heat, bring to a simmer and continue to cook until cranberries begin to burst, 12-15 minutes.
- Once the meatballs are fully cooked, remove them from the oven and add the prepared sauce.
- Serve and Enjoy!
